Every batch is stone-ground from first-harvest tencha, producing an ultra-fine powder in the 5 to 10 micron range. That particle size matters — it's what gives ceremonial matcha its silky mouthfeel and the ability to suspend cleanly in water without grit or sediment.
The colour is a reliable quality indicator. Genuine ceremonial grade should be a vivid, almost luminous emerald green. Anything dull, yellowish or olive-toned is a sign of later harvest leaves or poor processing. Storage guidance for commercial buyers
Matcha is sensitive to light, heat and oxygen. Store sealed bags in a cool, dry environment away from direct sunlight. Unopened bulk bags maintain quality for 12 to 18 months. Once opened, use within 4 to 6 months for best colour and flavour — though proper resealing extends this significantly.
For cafe and hospitality settings, decant working stock into opaque, airtight containers and keep the bulk supply sealed until needed. Refrigeration is ideal for longer-term storage but not essential if conditions are cool and stable.
